Hayashi Rice
An illustrated step by step recipe of a classic yoshoku (western style food with Japanese interpretation).
Hayashi rice is a beef stew somewhat like beef bourguignon eaten with rice.
Yokohama and Yokosuka, as principal port of entry after Japan was opened to foreigners, are two places of early yoshoku development. Sampling those foods in those places is an interesting thing to do.

Yokosuka is the place to try some kaigun curry.

If you are in Yokohama, an interesting experience is to go to Baiko-Tei, also known as Baiko Emmie's, for some original Hayashi Rice. It is a small hole-in-the-wall near Yokohama Park where the baseball stadium sits, and a good place to sit and absorb some history.
ReplyDeleteIt is one of the places mentioned in the article at:>

I suspect Emmie may no longer be alive, but I hope her restaurant continues on.

Another yoshoku dish is ハンバーグ (hamburger steak). As with Hayashi, it often is served with a demi-glace sauce or a wine reduction as in this recipe.
ReplyDeleteNot a bad idea to sample all of these next time you're in Japan.
